How to Update to a new version in iTunes?

I've tried to research this but want to check that what I'm about to spend a few days tearing my hair out doing, is correct. I have an app on iTunes. I have updated my existing app on buzztouch (not started from scratch again). Admittedly, this has prompted everyone who runs the app to refresh each time but as I have only added a fee extra screens and made no big changes, it doesn't seem to cause any problems. I now plan to download my config file again and re-compile in Xcode. Then I will try to publish THAT new project as an update. Correct?

Yes, just has to be the same AppID. Be aware that if you compile with XCode 5, the design will be different.

Thats correct. You need to create a new version on itunesconnect. Cheers.
